Chicken Gnocchi (pronounced N-yo-kee) Soup
Chicken Gnocchi Soup is one of my favorite soups and one of the easiest to make! This soup is 100 % homemade and it took 10 minutes to put together! Here in Indiana our local grocery chain that is the cheapest is Aldi's. I LOVE Aldi's and shop there as much as possible! Everything in this soup can be found at Aldi's except for the ditalini pasta and the gnocchi. You can purchase those at Meijer or Walmart. I keep all of these ingredients on hand so I can whip up this soup any time. It is a great soup to take if someone is sick, lost a loved one, kids are sick, hubby is sick, or you are sick! It's all time favorite! This recipe is Mother tested and kid approved! Enjoy!
Ingredients:
1 medium Onion, 1 Tbsp. Garlic or fresh garlic, 1 Tbsp. Olive Oil, 1 Tbsp. black pepper, 1 Tbsp. Chicken Soup Base, 2 Tbsp. Parsley flakes fresh or dried, Chicken Breast Cubed / Tyson Chicken Breast in the can (Great Value brand works too), 1 can of cream of celery soup, 1 box of gnocchi, 1/4 box ditalini pasta or amount desired, cans of any of your favorite vegetables (can use frozen veggies too). In this recipe I used these cans of veggies: Carrots, Corn, Peas, Butter Beans.

Directions:
In a stock pot add Olive Oil, onion, and garlic
on medium heat and sautee.
Add chicken of your choice. Here I used Great Value Chicken Breast in a can because I wanted to be simple today. I sometimes use Tyson Chicken Breast in a can or I boil chicken breasts and shred myself.
Next add the veggies that you chose to use. I usually pick something green (can be green beans, spinach or peas) corn, I always use carrots, this is the first time I tried butter beans because I wanted to add a bean it was a VERY good choice. The butter beans were delicioius in it. I have to go buy more butter beans now. =)
After adding the veggies, I add black pepper and cream of celery for some mouth watering flavor! Why don't I add cream of chicken? There is chicken and chicken broth in it for the chicken flavor. So I use cream of celery because I like a creamy soup but I also like a very flavorful soup. I try to add as many good flavors in as many DIFFERENT ways as I can. For example, I sautee' the onions and garlic to get a good taste then add the chicken to flavor the chicken. Everything I do is what I call a "layering technique." I layer the flavors to build up to what I want it to taste like. I am NOT a chef and I have never had a cooking class. So this is straight from me and only me. (Just as soon as I think I made this technique name up someone else will have already thought of it! ha ha) Anywho, I add the cream of celery here in the recipe. Then I add the chicken soup base, the chicken broth, gnocchi and ditalini pasta. I boil this all together and when it reaches a good strong boil, I lower the heat to a simmer for 30 minutes and.....

Dawn's Fried Sweet Potatoes
Sweet potatoes are so healthy for you! We should find a way to incorporate them into our diets and not just on Thanksgiving in sweet potato pie or other dishes. Tonight instead of regular fried potatoes I made sweet potato fried potatoes! I used Canola oil, onion, and sweet potatoes. Simple, Simple! We loved them! You will have to try it!

Chicken & Broccoli Casserole
2 large chicken breasts
1 box of stove top stuffing
2 cans cream of mushroom soup
1 bunch of broccoli
1 bag of shredded cheese (your choice, I use colby jack)
Boil the chicken breasts, when cooked shred and place in a greased 9x13 pan. Steam broccoli florettes until tender. Stir in cream of mushroom soup, broccoli, and bag of shredded cheese. In a sauce pan cook the stove top stuffing according to directions. When finished place on top of the broccoli & chicken mixture. Bake for 45 minutes in oven @ 350 degrees.

Meatballs:
Ground beef in a large bowl, add Italian bread crumbs, egg (1 or 2 depending on the amount of hamburger) this is 2 lbs. so I used 2 eggs, onion, garlic powder. Mix well, roll into large balls. Cook in a pan on top of the stove. When fully cooked add your favorite sauce and simmer to heat.
Spaghetti:
Boil spaghetti in a large pot add a little oil to the water and sea salt
Cook until tender, then drain
drizzle with olive oil and add basil or italian seasoning to spaghetti, then toss spaghetti
top with spaghetti sauce and meatballs
Can serve with garlic bread or bread sticks and salad
